Is the paneer on your plate really made from milk?
Searches for “anabolic paneer” have grown alongside concerns about fake and adulterated dairy products in India. But there is an important clarification: “anabolic paneer” is not an official food-safety category used by FSSAI. The term appears to have emerged from confusion between different food-adulteration concerns. Anabolic steroids have been discussed in connection with poultry and meat, while the problems reported with paneer involve substances such as vegetable oil, starch and other non-dairy ingredients.
The product consumers should actually be concerned about is often described as analogue paneer, synthetic paneer or fake paneer. And identifying it is not always as simple as looking at its colour or texture. Here is everything you need to know about how to identify suspicious paneer, which home test actually works, and when only a laboratory can give you a reliable answer.
Real paneer is fundamentally a dairy product produced by coagulating milk. Analogue products try to reproduce its appearance, texture or cooking behaviour using other ingredients.
One major concern is the substitution of milk fat with cheaper vegetable oils. That difference may be difficult for an ordinary consumer to detect visually. FSSAI has taken a strict position on misleading labelling. In an April 2026 public notice, its West Region said selling cheese analogue as “paneer” is a serious violation and directed manufacturers and food-service establishments to correctly identify analogue products.
Restaurants and other centrally licensed food establishments using cheese analogue have also been told to disclose its use rather than present the dish simply as paneer.
There is no single home test capable of confirming whether paneer is genuine. However, consumers can look for warning signs and perform one FSSAI-recognised quick test for added starch.
If you are buying packaged paneer, start with the label.

Be cautious if a product that looks like paneer is labelled with words such as analogue, non-dairy preparation or vegetable-fat-based product. A properly labelled analogue product is not the same thing as fraud. The problem arises when a non-dairy or analogue product is passed off as genuine paneer. FSSAI specifically says cheese analogue should not be sold to consumers or restaurants under the misleading name “paneer.”
This is especially relevant when eating paneer dishes outside the home. If a dish is unusually cheap, or you are unsure about the establishment, you can ask whether the restaurant uses dairy paneer or an analogue product. FSSAI has directed centrally licensed food-service establishments to maintain vigilance over their raw materials and disclose the use of cheese analogue through menus or display boards. That means consumers have a reasonable basis for asking what ingredient is being served.
This is the most useful home test because it comes directly from FSSAI's DART—Detect Adulteration with Rapid Test—guidance.
To test paneer for added starch:
If the sample develops a blue or blue-black colour, it indicates the presence of starch.
If it does not turn blue, this particular test has not detected added starch. But there is a crucial limitation.
Passing the iodine test does not prove that the paneer is genuine. It only tells you that the test did not detect starch. A product containing vegetable fat instead of milk fat could still pass the iodine test.
You may see social-media videos claiming fake paneer can be identified because it feels unusually rubbery, does not crumble correctly or behaves differently when fried. These observations may raise suspicion, but they are not reliable proof of adulteration. Texture varies naturally depending on:
A firm or rubbery piece of paneer is therefore not automatically fake. Similarly, soft paneer is not automatically pure. Use sensory clues only as reasons to investigate further, not as a final verdict.
Sometimes. A vegetable-fat-heavy product may taste different from fresh dairy paneer, and poorly made synthetic products can have an unusual mouthfeel. But taste is subjective. Spices, gravy, frying and restaurant preparation can hide differences extremely effectively. That is especially true in dishes such as:
By the time paneer has been fried and covered in a strongly flavoured sauce, a diner may find it almost impossible to identify the underlying fat source through taste alone.
This is where the science becomes much stronger. FSSAI officials cited by Mint said laboratories can use beta-sitosterol testing and fatty-acid profiling to detect substitution of dairy fat with vegetable oil. Beta-sitosterol is a plant sterol found commonly in vegetable oils but present at very low levels in pure milk fat. According to the FSSAI official cited by Mint, pure milk fat generally contains less than around 5 parts per million, while 7 ppm is treated as a red-flag threshold indicating likely vegetable-oil adulteration.
This is far more useful than visual inspection. If vegetable oil has been carefully processed into a paneer-like product, it may look and cook convincingly enough to fool a consumer.
A laboratory can examine its actual fat composition.

FSSAI says consumers can get food products tested through its notified laboratories or report suspected products to their state food-safety department for testing. FSSAI also operates Food Safety on Wheels mobile testing laboratories in different states for rapid food-safety screening. So if you suspect systematic adulteration by a restaurant, caterer, dairy or supplier, you do not have to rely only on a home test.
This is perhaps the most important practical point. Imagine two suspicious paneer samples.
Sample A: Genuine dairy paneer mixed with starch to increase weight. The iodine test may detect it.
Sample B: A paneer-like product made partly with vegetable oil but containing no added starch. The iodine test may show nothing unusual. That does not make Sample B genuine paneer. The two products require different testing methods.
This is why viral advice claiming one home test can identify every type of fake paneer should be treated with caution.
For everyday shopping, a few precautions reduce risk:
Buy sealed products from established manufacturers or trusted dairy shops.
None of these steps individually guarantees authenticity. Together, however, they give consumers a much better screening process than simply squeezing the paneer or judging its colour.
FSSAI has increased regulatory attention on dairy analogues and misleading labelling. Its April 2026 notice specifically warned manufacturers and restaurants against supplying or serving cheese analogue as paneer. Food-service establishments were told to verify incoming ingredients through regular testing and maintain procurement and testing records.
FSSAI's Central Advisory Committee has also debated stricter treatment of unstandardised dairy analogues, with members expressing concern that products such as analogue paneer can mislead consumers and lack the nutritional characteristics expected from genuine dairy products.
The short answer is: You cannot reliably identify every form of fake paneer simply by looking at it. And technically, “anabolic paneer” is the wrong term. If your concern is starch adulteration, FSSAI's iodine test can provide a useful home screening method.
The safest rule is simple: do not trust viral kitchen hacks alone. Check the label, ask restaurants what they serve, use the iodine test only for starch, and rely on lab testing when the real question is whether your paneer is truly made from milk.
